This yummy pie is perfect for a light Spring/Summer supper...just add a salad and fresh, crusty bread and you have a wonderful meal.

Chocolate-Covered Caramelized Matzoh Crunch
Makes approximately 30 pieces of candy

Ingredients:

• 4 Eggs
• 1 1/4 C. Vegetable Oil
• 2 C. White Sugar
• 2 tsp. Vanilla Extract
• 2 C. All-Purpose Flour
• 2 tsp. Baking Soda
• 2 tsp. Baking Powder
• 1/2 tsp. Salt
• 2 tsp. Ground Cinnamon
• 3 C. Grated Carrots
• 1 C. Raisins
• 1/2 C. Butter
• 8 oz cream cheese, softened
• 4 C. Confectioners' Sugar
• 1 tsp. Vanilla Extract

After twenty years of planning, The Inn on the Pond received its Certificate of Occupancy & license. The first residents moved in on Monday, March 26, 2012.

Menorah Manor received a special delivery on February 23.  It arrived in the morning, carefully swaddled in blue velvet with a burgundy belt at its waist, weighing in at 19 pounds and stretching to 20 inches in length.  The delivery was performed meticulously; no less than four “specialists” worked for over half an hour to remove sticky packing tape, yards of bubble wrap and a cardboard casing, to make sure that the specimen remained intact and without injury.

It has been several months since I have become the new CEO of Menorah Manor and I am beginning to settle into my new position and the Tampa Bay area.  Everyone has been extremely gracious and nice to my wife, Alice, and me. We genuinely feel welcomed.  I thought that I would miss the cold but it is truly paradise on the west coast of Florida!

I have really enjoyed meeting the residents of the Bernard L. Samson Nursing Center and the Toby Weinman Assisted Living Residence, and participating with them in the wonderful activities that are provided. I have met a number of family members and look forward to meeting more of you very soon. I have gotten to know many of the employees, and the residents are really fortunate to have such a dedicated, caring and trained staff that is committed to providing a high level of quality care.

Base:

• 3 Tbsp butter
• 3/4 c. brown sugar, firmly packed
• 6 slices pineapple or 1 can (20 oz.) of drained pineapple chunks
• maraschino cherries

Batter:

• 1/2 c. butter
• 1/2 c. sugar

• 1 1/2 c. all-purpose flour
